Since my collection of eggplates now extends beyond 100 pieces, I am always looking for ways to use them beyond just serving their intended food, deviled eggs. Most recently I was attending a neighborhood garden party with a number of neighbors at our coast house in Morro Bay, California. I knew from experience that guacamole, an avocado based dip for those who might not know, is always a popular item, especially during the summer months when they are available fresh and frequently from local sources as the hillsides near our home in San Luis Obispo County are the home to extensive orchards of avocado trees. Regardless of the origin of the fruits, serving, and especially, eating any dip is a challenge at these parties where guests are mostly standing while eating to better circulate and chat with friends and neighbors. I along with a neighbor and good friend came up with a new way to serve the dip, prepared as a ready to eat appetizer, conveniently served in an eggplate, in this case, a scarlet red eggplate in the Fiestaware line, produced by the Home Laughlin China Company of Newell, West Virginia, still proudly American made since 1936.
