This additional serving idea consists of mini-tostadas served on a bright scarlet Fiesta Ware by the Homer Laughlin China Company deviled egg plate. These are a quick and attractive dish for summer events. They are easy to make from a bag of mini-shells, refried beans, finely shredded cheese and a slice of scallion. If you have more time you can add a layer of seasoned ground beef and/or rice. These are a fantastic one-bite treat perfect for summer parties, picnics, or pot-lucks.
