Stuffed Roma Tomatoes

Stuffed Roma tomatoes fit nicely into the depressions of a deviled egg plate for a beautiful presentation at picnics or other gatherings.

I used an antique blue/green carnival glass egg plate to serve this selection of two types of stuffed tomato.  This is a quick solution to the need to bring a dish to a gathering.

Tomatoes

Select the tomatoes for size to ensure a good fit.  I used tuna salad and a confetti bean salad to fill the tomato shells in the pictured dish.

Select tomatoes, wash, cut in half and scoop out seeds and interior pulp.

Fill with your favorite tuna salad or chicken salad.  Add a garnish.
Recipe for Confetti Bean Salad
1 can white beans, rinsed well and drained
chopped dried onion
chopped red, yellow, and orange mini sweet peppers
chopped olives (half jalapeno stuffed and half pimento stuffed)
oregano leaves (dried and crushed, to taste)
olive oil
salt (to taste)
pepper (to taste)
Mix ingredients and stuff!
Enjoy the beautiful presentation and the great taste.
